

Crispy Croquettes with a Zesty Pineapple Sauce
Soft creamy potato and tuna bites, crumbed and cooked to a golden crispy finish. Elevated by a zesty pineapple sauce that brings balance and cuts through the richness of the croquettes. Additionally, the sweet vibrant pops of pineapple is a delightful combination with the crunch of the croquettes.
Ingredients
Croquette

800 g mashed potato

425gram canned tuna, drained and flaked

2 tbs sour cream

cloves garlic
-
1 tsp Dijon mustard

2 tsp paprika

1 lemon, zested and juiced

4 green onions, chopped

1⁄2 cup parsley, finely chopped

Salt and pepper to taste
For bread crumb mix

3 eggs and 1⁄4 cup water (mix together to make egg wash)

Panko Bread crumbs

Plain flour for dusting

Oil for frying
Method
Croquette mixture

Mix potato mash, flaked tuna, sour cream, mustard, paprika, lemon zest and juice,
green onions, parsley, salt and pepper until well combined.

Shape into ovals. Put aside

Dust the potato croquettes with flour
Dip in egg wash
Roll in panko bread crumbs.
Set aside

Fry croquettes in hot oil until golden brown.

3 tbs lemon juice

1 clove garlic

1⁄2 bunch coriander

1⁄2 bunch parlsey

1⁄2 cup extra virgin olive oil

1⁄2 cup pineapple chunks

2 tsp sugar

Salt and pepper to taste

Place all ingredients into a blender and process until a smooth sauce is formed.
