

Poke Bowl Recipe

Ingredients
Tuna Mix

3⁄4 cup (180g) “Happy Sea” chunky tuna

2 tbsp (30ml) soy sauce

1 tbsp (15ml) sesame oil

1 tbsp (15ml) oyster sauce

1 tsp (5ml) rice vinegar

1 tsp (5g) finely grated ginger
-
1 small garlic clove, minced (about 3g)

1 tbsp (5g) finely chopped green onion
Sesame Dressing

1⁄4 cup (60g) mayonnaise

1 tbsp (15ml) sesame oil
-
2 tsp (10ml) rice vinegar
-
2 tbsp (15g) toasted white sesame seeds
Pickled Carrots

1⁄2 cup (120ml) rice vinegar
-
1⁄4 cup (60ml) water
-
2 tbsp (25g) sugar
-
1 tsp (5g) salt
-
1 medium carrot, julienned (about 80g)

1⁄4 charred “Happy Garden” pineapple, cut into bite-sized pieces (about 50g)

1⁄2 cup (90g) cooked sushi rice

1⁄4 cup (25g) shredded purple cabbage

1⁄4 cup (25g) thinly sliced cucumber

1⁄2 avocado, sliced (about 70g)​

1 tbsp (15g) blanched edamame beans

1 tbsp (5g) crispy shallots (for garnish)

Fresh coriander (for garnish)

Black and white sesame seeds (for garnish)
Method
Tuna Mix

In a bowl, mix the “Happy Sea” tuna with soy sauce, sesame oil, oyster sauce, rice
vinegar, ginger, garlic, and green onion.

Let marinate for 10 minutes.
Sesame Mayo Dressing

Whisk together the mayonnaise, sesame oil, rice vinegar, and toasted sesame seeds until smooth.

In a small saucepan, bring the water, rice vinegar, sugar, and salt to a boil.

Place the julienned carrot in a jar and pour the hot pickling liquid over it.
